How to Smoke Meatloaf on the Pellet Grill

Meatloaf is a classic American meal, we kicked it up by adding some great spices and smoking it on the pellet grill.
This is a simple recipe and one that can be completed on any backyard pit. Give it a try and as I always say make fun and make it you own!

2 LBS of 80/20 Ground Beef
1 TSP Salt
1 TSP Pepper
1 TBS Garlic Powder
1/4 Cup of Parsley
1/4 Cup of BBQ Sauce
1/8 Cup of Cow Cover by Kosmos Q (or your
favorite seasoning)
1 Large Egg
1/4 Ketchup
1 Medium Onion Chopped
1 Cup Panko Breadcrumbs

I started this recipe by mixing all of the ingredients above together with the exception of the Cow Cover and the BBQ Sauce.
You want to mix the meat/ingredients together gently without over working it.
Once mixed I placed plastic wrap into a standard loaf pan.
I then put the mixture into the pan evenly, pressing it down to form the loaf. Place the pan in the refrigerator for at least one hour.
While the meatloaf was setting up in the refrigerator, I set my pellet grill to 350 to start to preheat.
After one hour I flipped the meatloaf on to a chicken rack and removed the plastic wrap.
I then seasoned the top with my favorite BBQ Rub.
After 15 minutes I placed the meat loaf on the rack into the grill.
At 160 degrees I then applied the BBQ Sauce to the top and cooked for another 10 mins.
After the glaze had setup I pulled the meatloaf out to rest for 15 mins.
