炖牛肉配料 For lowtemp braise:
陈皮6g Orange peels 6g
丁香10个 10 cloves
甘草5g Licorice 5g
草果1个 1 tsaoko
小茴香3g Fennel seeds 3g
料酒10g Cooking wine 10g
姜10g Ginger 10g
耗油20g Oyster sauce 20g
盐根据自身的胃口调整Salt to taste
开水1.5kg Boiling water 1500ml

酱料 For the sauce:
黄豆酱8g Soybean paste 8g
豆瓣酱5g Chili bean sauce 5g
麻酱5g Sesame paste 5g
腐乳20g Fermented tofu (red) 20g

红烧牛肉配料 Ingredients for hightemp braise:
胡萝卜4根 4 carrots
糖色20g或老抽5g Caramel 20g
酱油15g如果加了老抽则减少到10gSoy sauce 15g
冰糖10g Rock candy 10g
油20g Oil 20g

面条食材 Ingredients for noodles:
高筋面粉 Bread flour 250g
温水 Warm water 110g
盐 Salt 3g
食用碱 Soda ash 3g
