Sushi
Sushi Rice mixture:
2 tbsp rice vinegar
2 tsp white sugar
1/2 tsp salt
Combine vinegar mixture and 3 cups of warm rice.
Cover with damp cloth and cool completely.
Soyginger dip:
10 tbsp soy sauce
6 tbsp rice vinegar
2 1/2 tbsp water
2 tbsp fresh ginger, grated
2 cloves garlic, minced
2 tsp white sugar
3 tsp sesame oil
Mix well and set aside
Spicymayo dip:
4 tbsp mayonnaise
4 tsp hot sauce
2 tbsp calamansi juice
Spicy Tuna Filling:
Combine 4 tbsp canned tuna and 1 tbsp mayonnaise
Mix well and set aside
California Maki Procedure:
1) Wrap the bamboo mat with cling wrap
2) Place the roasted seaweed sheet/nori sheet on the mat shiny side down
3) Spread a layer of 1 cup rice on top of the seaweed sheet
4) Sprinkle toasted black 1 tsp sesame seeds
5) Flip it upside down
6) Arrange the filling on top of the sheet
7) Filling: 2 slices of avocado, 1 crab stick, cut in half and 1 pencilsized cucumber
8) Roll the bamboo mat
9) Cut the sushi with wet sharp knife
California Maki with sweet mango:
1 pencilsized cucumber
2 slices of sweet mango
1 crab stick, cut in half
Second sushi:
1) Lay another nori sheed on top of the mat shiny side down
2) Spread a layer of 1 cup rice on top of the nori sheet. Leave a space about 2 inches
3) Arrange filling on top
4) Begin rolling
5) Seal the roll with water
Filling #3:
1 pencilsized cucumber
2 strips of carrots
2 tbsp of spicy tuna filling
Filling #4:
1 pencilsized cucumber
2 strips of carrots
3 cheese sticks
2 tbsp of spicy tuna filling
1 pencilsized egg omelet
Filling #5:
1 pencilsized cucumber
2 strips of carrots
2 slices of mango
3 cheese sticks
Filling #6:
1 pencilsized cucumber
2 strips of carrot
bunch of chinese kangkong leaves
2 pcs. of stem from kangkong
3 cheese sticks
Filling #7:
2 slices of sweet mango
2 slices of avocado
3 cheese sticks
Kimbap Rice:
2 cups warm rice
pinch of salt
1/2 tbsp sesame oil
Mix well and cool completely
Kimbap filling:
Saute a bunch of julienned carrots in 1/2 tbsp sesame oil until crisptender. Season with salt
Set aside and cool completely
Beef Barbeque: cook until done
*marinate beef with 1 tbsp soy sauce, 1 tbsp calamansi juice, 1 clove garlic, 3 tbsp ketchup and 2 tbsp oyster sauce.
Marinate for 1 hr. or overnight
