The Hasselback potato is a longtime favorite of mine. In this video, I put a little twist on it by 'crosscutting' the potato rather than cutting it the traditional way. I also do a butter baste while roasting, and then top the potato off with a delicious sour cream and chives aioli, bacon, cheese, and green onions. The flavor of this dish is STELLAR!!
