How to Make Cookie Puff Pastry Like Cupcakes | Baking

*Cup puff pastry*.
Muffin pan mold

*[Cookie dough
Unsalted butter 40g
40g granulated sugar
20g flour
20g strong flour (light flour is also OK)
Cut out 2~3mm thick cookies with a 5cm round die cutter (one size smaller than the bottom of the muffin mold)

** For about 12 choux pastry dough
50g milk
50g water
3g granulated sugar
1g salt
45g unsalted butter
60g flour
120g whole egg

Round tip tip No. 15

*Baking
Preheat to 200℃.
1 Bake at 180℃ for 15 minutes
2 Lower the temperature setting to 170℃ and bake for 15 minutes.
Do not open the door until 20 minutes have elapsed!
 If the temperature drops too quickly before the surface is set, the choux will shrivel up.

[Custard]*
3 egg yolks
50 g granulated sugar
20 g flour
300 g milk
1/3 vanilla bean
15 g unsalted butter

[Diplomat cream] for about 10 pieces
Total custard cream
Whipping cream, whipped stiff (35%) 100g
*I used about 50 g per piece

[Chocolate cookie dough]
Unsalted butter 40g

20g light brown sugar
20g strong flour (light flour is OK)
5g cocoa powder
Cut out 2~3mm thick dough with a 5cm round die cutter.

Chocolate puff pastry dough (for about 12 pieces)
50 g milk
50g water
2 g granulated sugar
1g salt
45 g unsalted butter
55 g flour
5 g cocoa powder
120g whole egg

[Strawberry dice] for 6 pieces
Strawberries (cut into 1cm cubes) 80g
10g strawberry jam

[Finishing touches]
powdered sugar that won't cry
Strawberries (1/2 cut)
Pistachio assiette

100g cream cheese
20g granulated sugar
100g heavy cream (35%)
1 tsp lemon juice

lemon zest
Cocoa powder for topping
