The humble catfish has transformed from a dirty meal for poor families living in the Delta to a highpriced meal for connoisseurs around the world. In this probing, historic exploration, doctoral student Karen Senaga follows the transformation of the catfish and explores how culture, economics and history influence our tastes and preferences.

Karen Senaga is a doctoral student in the Department of History at Mississippi State University and working on her dissertation entitled, “Tasteless, Cheap, and Southern? The Rise and Decline of the FarmRaised Catfish Industry.”

She currently resides in Brookings where she is completing a dissertation fellowship at South Dakota State University.
