老媽子秘方煎雞翼

材料
急凍雞中翼10隻

處理
1. 雞翼清水解凍。
2. 雞翼解凍後倒去水分加入粗鹽1茶匙撈勻醃10分鐘去除雪味、腥味及加入少許鹹味。
3. 雞翼清水沖洗乾淨擎乾水廚紙索乾。
4. 雞翼加入生粉1湯匙撈勻。

烹調
1. 大火在鑊內燒熱油1湯匙半。
2. 轉中慢火加入雞翼煎香。
3. 雞翼的一面已煎至金黃色反轉繼續煎。
4. 雞翼兩面都已煎至金黃色轉大火煎1分鐘。
5. 反轉雞翼大火煎1分鐘。
6. 熄火倒去多餘油分攤凍雞翼1分鐘。
7. 雞翼加入糖1湯匙撈勻。
8. 在雞翼掃上適量生抽。
9. 完成可享用。

Ingredients:
Frozen midjoint chicken wings 10 Nos.

Preparation:
1. Chicken wings, defrost in tap water.
2. Chicken wings have been defrosted, pour away water. Season with 1 tsp of cooking salt for 10 minutes, to remove unpleasant smells and add some salty tastes to them.
3. Chicken wings, rinse thoroughly. Drain. Dry with kitchen towels.
4. Chicken wings, add in 1 tbsp of tapioca starch. Mix well.

Steps:
1. Heat up 1.5 tbsp of oil at high flame in wok.
2. Turn to mediumlow flame, put chicken wings, fry well.
3. Chicken wings, one side has been fried into golden yellow, flip over and continue frying.
4. Chicken wings, both sides have been fried into golden yellow, turn to high flame and fry for a minute.
5. Flip over the chicken wings, fry at high flame for a minute.
6. Turn off fire. Pour away excess oil. Chicken wings, wait for a minute for cooling down.
7. Chicken wings, add in 1 tbsp of sugar, mix well.
8. Brush appropriate amount of light soya sauce on top of chicken wings.
9. Complete. Serve.
