Fish balls are ubiquitous in Singapore, but how many of the fish balls we eat are made by hand? Yellowtail is the traditionalist's fish of choice and for good reason. It has high collagen content and gelforming capabilities, and if you can get your hands on it, you should definitely use it. However, as I am living overseas, I am using basa fillets. I would definitely want to test this recipe again with the right fish to see how it compares!

Fishballs
Makes about 70 fish balls
1kg fish fillets, preferably yellowtail
200g ice water
4 tablespoons salt
1 1/2 teaspoon white pepper
1 teaspoon sugar
60g egg whites (optional, but I recommend this if you're using basa like me)
1 chilli, chopped (optional)
2 sprigs spring onion, sliced
