Using vegetables as the main ingredient, these dumplings are made with green dough colored with spinach juice and shaped like turnips using dumpling wrapping techniques. The visually appealing shape and color make your mouth water. The filling is very flexible and doesn't require cabbage. Use leftover carrots, winter melon, and corn from the fridge, add wood ear mushrooms to help digestion and lower cholesterol, and mushrooms. The filling for vegetarian dumplings is looser than meatbased dumplings, so it may be more difficult to handle. Therefore, adding a suitable amount of steamed taro to the oil and vegetable mixture can help bind all the ingredients together, making it easier to wrap. Season with Japanese miso, shiitake mushroom powder, ginger powder, and garlic powder. Even without meat, the various vegetables create a rich and flavorful taste. Dip in ginger and black vinegar for a satisfying meal.
