Easy Guokui Recipe 薄脆锅盔的做法

Guokui/ 锅盔 is made in different ways in China. Today I share how to make Guokui with pork and dried mustard leaf. Two tips: 1. rinse the dried mustard leaf thoroughly to remove excess salt; 2. roll out the dough to be thinner.

Dough:
allpurpose flour 300g (2 cups)
yeast 3g (1 tsp)
warm water 170g (¾ cup)
oil 15g (1 tbsp)

Filling:
pork 150g (1 cup)
dried mustard leaf 50g (½ cup)
light soy sauce 8g (2 tsp)
salt 1g (¼ tsp)
fivespice powder 0.5g (⅛ tsp)
sugar 1g (¼ tsp)
Chinese green onion 3g (½ tsp)
ginger 30g (¼ cup)
oil 11g (1 tbsp)
sesame oil 9g (1 tbsp)
black sesame seeds 16g (2 tbsp)
