Dwaeji Gukbap Recipe (Korean Pork Rice Soup)

During my visit to a renowned shop in Busan near Haundae Beach last May, I had the chance to try the traditional Korean Pork Rice Soup, Dwaeji Gukbap. Finding it rarely offered in local Korean restaurants, I was inspired to recreate this comforting dish with some personal twists based on the flavors I remembered. Here’s my customized version, which you can adjust to suit your own taste preferences. Enjoy creating and sharing this delicious meal with your family!

Dwaeji Gukbap Recipe (Korean Pork Rice Soup)

Ingredients:
2 lbs of pork belly
1 inch piece of ginger, sliced
34 green onions, chopped
2 teaspoons of salt
1 small piece of rock sugar (to enhance flavor)
34 cloves of garlic, minced (optional)
45 black peppercorns (optional)
1 tablespoon of baby shrimp sauce (optional; adds a unique umami flavor)
1 cup of kimchi, chopped (optional; for a spicy kick)
1 cup of chives, chopped (optional; for added freshness)

Dwaeji Gukbap is normally served with a bowl of rice and a small plate of rice noodles on the side, along with pickled side dishes for a complete meal. However, you can opt out and just have rice or noodles alone if you prefer. It is all up to you how you like to enjoy it.
