SWEET POTATO BROWNIES
contributed to The Plant Based Athlete by Meagan Duhamel (Olympic Gold medal winning figure skater)

Preheat oven to 350 degrees F.

INGEDIENTS:

1 cup coconut sugar (I used date syrup)***
3/4 cup mashed sweet potatoes
1/2 cup peanut butter
1/2 cup cocoa powder
1/3 cup flour (I used a gluten free blend from Bob's Red Mill)
1 teaspoon baking powder
1 teaspoon vanilla extract (I used vanilla bean powder)
1/2 cup vegan chocolate chips (I used 100% cacao chips, no sugar)

In a large bowl combine all ingredients and mix well. Pour batter in a 9" x 9" baking pan and bake for 40 minutes until the edges are crisp and the center is gooey but cooked through.
Let the brownies cool for 15 minutes before slicing into 16 bars.
