When it gets cold, I love coffee that heals me, even if I am very weak at caffeine!
More, the coffee with sweet caramel makes the world happy.
This cake is made with white coffee whipped cream (Not the brownish cream) and divine caramel.
The taste is luxurious and elegant.

I wanted to use the leaf to decorate the autumn cake.
There is plenty of Ivy leaves in the garden of my apartment. So I choose it.
Ivy is nontoxic.
It is used as a medicinal Ingredient in oriental medicine.
The leaves were washed well in water and disinfected with alcohol before use.
I made leafshaped chocolate using this and decorated cake,
This cake looks like autumn, and also tastes really good.

Ingredient

♥ Coffee Whipped Cream
52g roasted coffee beans
200g heavy cream A
Whipped cream B: add to make 420g cream in total.
36g sugar

♥ Chocolate Leaf
1 ivy leaf
Appropriate amount of white chocolate couverture

♥ Caramel Filling
50 g sugar
50g heavy cream
25g hazelnuts (roasted and chopped)

♥ Coffee Genoise (15cm/6 inch)
150 g eggs
80 g sugar
100g cake flour
35 g hot milk
Instant coffee 6g
(dissolve instant coffee in hot milk)
26g unsalted butter


♥ Coffee Syrup
60g Espresso coffee
10g sugar

♥ Caramel Glaze
5g gelatin
83g sugar
100g water
83g corn syrup
55g condensed milk
83g white chocolate couverture.
