Crockpot lemon and garlic chicken thighs:
INGREDIENTS
68 boneless skinless chicken thighs
1 onion chopped
1/2 teaspoon salt and pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon crushed red chili pepper flakes
1/2 teaspoon paprika
4 garlic cloves, sliced or minced
1 teaspoon Italian seasoning
1/2 stick butter, diced
Zest of a lemon
Juice of one lemon
1/3 cup chicken broth
lemon slices, for garnish

DIRECTIONS
In a small bowl, combine Italian seasoning, onion powder, garlic powder, paprika, crushed red chili pepper flakes, salt, and pepper. Sprinkle the spice mix over the chicken thighs.
Add 1 tablespoon of olive oil to a skillet and grill chicken for 12 minutes on each side or until slightly browned. Remove chicken and set aside.
Add chopped onion and garlic and cook for 23 minutes.
Place chicken thighs at the bottom of your slow cooker. Pour onion and garlic mixture over chicken. Combine 1/3 cup chicken broth, lemon juice, and zest, and pour over chicken thighs.
Top with diced butter.
Cover the crockpot and cook the chicken thighs for 34 hours on HIGH or 68 hours on LOW.
garnish with lemon slices. Serve hot with rice, mashed potatoes, cauliflower rice, zucchini noodles, pasta or quinoa. Enjoy!
