Barbequed pork is a classic Cantonese dish. Being a hardcore foodie of Cantonese cuisine, I have high expectations of this dish!

chopped shallots 10g
garlic 1 clove
salt 2 tbsp
sugar 200g
chicken powder 2 tsp
oyster sauce 1 tbsp
tahini 1 tbsp
hoisin sauce 3 tbsp
sand ginger powder 1 tbsp
fivespice powder 1/4 tsp
fermented Tofu 1 piece
soy sauce 125ml
rose wine 1 tbsp
sorghum wine 1 tbsp
honey 3 tbsp
baking soda 1/4 teaspoon
maltose 2 tablespoons
honey 2 tablespoons
hot water 1 tablespoon
lemon juice 1 teaspoon
salt 1/4 teaspoon
