2 medium onions ,sliced
1 tbsp (14g) butter
1 tbsp (14g) olive oil
1 tsp (5g) sugar
salt

Mushroom Filling
1 pound (500g) mushrooms ,sliced
23 cloves garlic
fresh thyme
1 tbsp (15ml) soy sauce
Salt and freshly ground black pepper
1 cup (100g) cheddar or gruyere cheese ,grated

For Topping
