材料
冬瓜 600克
蝦仁 200克
鹹蛋 2隻
薑 適量
做法
1⃣ 鹹蛋洗淨煮熟切丁備用。
2⃣ 冬瓜去皮、去籽切丁。
3⃣ 蝦仁去腸、洗淨吸乾水下鹽和白胡椒粉稍微抓拌。
4⃣ 熱鍋下油下蝦仁煎約1分鐘至變色取出備用。
5⃣ 蝦油留鍋內不用洗下薑片下冬瓜粒爆炒加入100毫升水。蓋上鍋蓋中小火炆煮5分鐘。
6⃣ 加入鹹蛋和蝦仁翻炒均勻加入少量的鹽調味勾芡上碟。

Ginger a few slices
Cooking Directions:
1⃣ Wash the salted eggs, boil until fully cooked, then dice. Set them aside.
2⃣ Peel the winter melon, deseed, and chop into cubes.
3⃣ Clean the shrimp, devein, and pat dry. Toss with a pinch of salt and white pepper powder.
4⃣ Heat oil in a pan and fry the shrimp for about 1 minute until they change color. Remove and set aside.
5⃣ Retain the shrimp oil in the pan (no need to wash). Add ginger slices and stirfry. Add the diced winter melon and pour in 100 ml of water. Cover with a lid and simmer over mediumlow heat for 5 minutes.
6⃣ Add the diced salted eggs and the shrimp to the pan. Stirfry until wellmixed. Season with a bit of salt, thicken with some starch slurry, and then serve.
