在意大利這個神奇的國度披薩可是國食並不單單是果腹的美味更是一種根植於意大利人民血液之中的文化體驗。儘管這種被認為是“全球美食”的食品起源於古希臘但人們還是普遍認為披薩誕生於意大利。更準確地說披薩誕生於意大利南部的一座主要城市——那不勒斯Naples。披薩作爲一种大衆喜愛的美食發展到今天儘管口味多種多樣形狀不同但主要還是分為兩大類意式披薩和美式披薩。
它們有什麼不同
1、 披薩醬意式披薩使用的新鮮的蕃茄醬(tomato sauce)、橄欖油(olive oil)、大蒜(garlic)和牛至葉oregano他們追求的是食物本身自然質樸的滋味清淡且清爽。而美式披薩用的番茄醬是經慢煮而成有自創的醬汁配方口味普遍比較濃郁。
2、披薩底意式披薩的底其實有很多種事實上幾乎每個小鎮都有自己的風格但有一點從未改變那就是薄底。原料也很簡單只用麵粉、水和酵母製成。至於美式披薩則是深盤厚底。
3、烘烤許多意式披薩店仍然沿用著傳統古老的窯烤方式來烤披薩通常3分鐘就可以烤好一個披薩這對披薩師的要求就高了火候以及時間的掌控需要一定的經驗才能做到游刃有餘。而美式的披薩選擇電子烤爐設定好時間就等著披薩出爐了。
披薩的功力主要看面皮麵團的韌性強到你無法想像剛剛撐開擀平的面皮會像有生命力一樣使勁的縮回去。開一個完美的披薩皮邊要厚裡面要薄得均勻不能有薄有厚或者有洞。

3. Baking: Many Italian pizza shops still use the traditional old kiln roasting method to bake pizzas. Usually, a pizza can be baked in 3 minutes, which requires high requirements for the pizza chef. The fire and time control must be certain. Experience can be at ease. For Americanstyle pizza, choose an electronic oven, set the time and wait for the pizza to come out.
The skill of the pizza depends mainly on the dough. The toughness of the dough is beyond your imagination. The dough that has just been opened and rolled out will retract as hard as it has vitality. Create a perfect pizza crust with thick sides and evenly thin inside. There should be no thin or thick or holes.

瑪格麗特披薩
這是最經典的意大利披薩口味也是最便宜的一個這是到意大利必吃的一款披薩。它可是披薩中的皇后時光荏苒經典永存。非常簡單的食材——番茄醬(Tomato sauce)新鮮馬蘇里拉奶酪 Fresh Mozzarella cheese和新鮮羅勒葉(Basil)正好對應著意大利的三色國旗沒有其他多餘的材料入口都是清新天然的味道。

500g 高筋麵粉

披薩醬
300g 西紅柿
1tsp橄欖油
1/2tsp鹽

The dough recipe:
8g yeast
5g sugar
50g olive oil
500g bread flour
200g pastry flour
430g milk
18g salt

Pizza sauce:
300g tomatoes
1tsp olive oil
1/2tsp salt
