[Ingredients]

Sawarak Black Pepper 2 tbsp
Deboned Chicken Thigh 2pcs
Oyster Sauce 1 tbsp
Light Soy Sauce 1 tbsp
Pepper 1 tsp
Shaoxing Wine 1 tbsp
Potato Starch 1 tsp
Sugar (to taste)
Garlic 2 cloves
White Cabbage 1pc
Carrot (small amount)
Sugar 1 tbsp
Sawarak Black Pepper 1 tsp
Lime Juice 1 tbsp
Mayonnaise 80ml
Potato 1 pc
Yellow Onion (half)
Garlic 2 cloves
Unsalted Butter 30g
Ketchup 2 tbsp
Flour 1 tbsp
Broth 200 ml
Sugar 1 tsp
Salt (to taste)
Worcestershire Sauce 1 tbsp
Dark Soy Sauce 1 tsp

00:13 How To Prepare The Sawarak Black Pepper
Wash the black pepper and air dry
Grind it into powder with a stone pound

Lay the Chicken Thighs flat, make a few slits and pat dry as much as possible
Marinade with the following
* Oyster Sauce 1 tbsp
* Light Soy Sauce 1 tbsp
* Pepper 1 tsp
* Shaoxing Wine 1 tbsp
* Potato Starch 1 tsp
* Sugar (to taste)
Cut two cloves of garlic into garlic slices and put them down to add a garlic flavor
Add a small amount of oil at the end to lock in the seasoning
It is best to marinate overnight, otherwise for at least three hours

Wash the White Cabbage, air dry and cut into stripes
Cut the Carrot into Stripes
* Sugar 1 tbsp
* Sawarak Black Pepper 1 tsp
* Lime Juice 1 tbsp
* Mayonnaise 80ml
Refrigerate overnight

Cut a Potato into strips
Sprinkle some salt and soak in water for half an hour
Pat dry the water and fry it slowly in oil at 180 degrees
Fry until golden brown
DoubleFry for 10 seconds with 200°C oil and pick it up
Sprinkle some salt

02:52 How To Cook Black Pepper Sauce
Dice half a Yellow Onion
Dice two cloves of Garlic
Saute the diced Onion with 30g of Unsalted Butter
When the onion become translucent, put the diced Garlic in
When it has smells of garlic, put a tablespoon of grinded Black Pepper and fry together
Add two tablespoons of Ketchup and sauté until fragrant
Turn to low heat and put a tablespoon of Flour
After frying, add 200ml of broth into it, turn it back to cook over medium heat
Do some tasting, then season with the following
* Sugar 1 tsp
* Salt (to taste)
* Worcestershire Sauce 1 tbsp
* Dark Soy Sauce 1 tsp for the colouring

04:06 How To PanFry Chicken Chop
Take the Chicken Thighs out of the refrigerator and let it cool to room temperature before frying
Heat up the frying pan to medium heat first
Place the Chicken Thighs with the skin's side down
Chicken Oil will come out when the chicken skin is heated
Fry the Chicken Thighs with this Chicken Oil
Fry for about three minutes, then turn up the heat a bit
Force out the remaining oil from the Chicken Skin to make it crispy
Flip to the other side and fry for 4 minutes
Done

[材料]

起骨雞腿兩片
蠔油一湯匙
生抽一湯匙
胡椒粉一茶匙
紹興酒一湯匙
生粉一茶匙
糖適量
蒜頭兩瓣
包菜一個
紅蘿蔔少量
糖一湯匙
黑胡椒一茶匙
酸柑汁一湯匙
美奶滋 80 毫升
馬鈴薯一個
洋蔥半個
蒜頭兩瓣
無鹽牛油 30 克
茄汁兩湯匙
麵粉一湯匙
高湯 200 毫升
糖一茶匙
鹽適量
喼汁一湯匙
老抽一茶匙

[做法]

處理黑胡椒
洗乾淨黑胡椒然後風乾
用石舂把它磨成粉

處理雞腿
它雞腿攤平然後幾刀盡量將水份印乾
用以下醃料
* 蠔油一湯匙
* 生抽一湯匙
* 胡椒粉一茶匙
* 紹興酒一湯匙
* 生粉一茶匙
* 糖適量
切兩瓣蒜頭成蒜片放下去令它有點蒜香味
最後加少量的油把肉汁鎖住
最好能醃過夜否則至少都要醃三小時

處理 Coleslaw中文叫白菜沙律
包菜洗乾淨晾乾切絲
紅蘿蔔切絲
* 糖一湯匙
* 黑胡椒一茶匙
* 酸柑汁一湯匙
* 美奶滋 80 毫升
放進雪櫃過夜

處理炸薯条
馬鈴薯切成條狀
灑點鹽用水浸半小時
把水印乾用180度的油溫慢慢炸
炸到變金黃色便撈起
再用二百度油溫翻炸十秒撈起
灑點鹽令它更惹味

煮黑胡椒汁
洋蔥半個切粒
將兩瓣蒜頭切成蒜粒
用 30 克無鹽牛油炒香洋蔥粒
洋蔥粒變半透明便把蒜粒放下去
聞到有蒜香味放一湯匙黑胡椒碎下去一齊炒
再放兩湯匙茄汁炒香
轉用細火放一湯匙麵粉
炒熟後便落 200 毫升高湯下去調回用中火煮
試味然後調味
* 糖一茶匙
* 鹽適量
* 喼汁一湯匙
* 老抽一茶匙上色

煎雞扒
雞腿從雪櫃拿出來晾到室溫才可以煎
滴走多餘的汁
首先調到中火熱平底鍋
雞皮向下放
雞皮受熱後會出雞油
用雞油去煎雞腿
大概煎三分鐘再把火力調高一點
把雞皮最後的油逼出來讓它焦脆
翻到另一邊也是煎四分鐘
完成
