Whole roast cauliflower covered in a rich cheese sauce.

This is not a side dish, this is the hero. It takes me back to my days running the kitchen at Gills Diner in Melbourne alongside my good mate Sammie Sweetheart. This is our take on the whole roasted cauliflower with cheese sauce which we developed together in the Gills Diner kitchen and added to the menu. Ingredients

1 head cauliflower
300g grated cheese
60g butter
50g flour
800ml milk

Method

1. Start by blanching the cauliflower in boiling salted water for 12 minutes.
2. Remove from water and let it drain (well).
3. Drizzle the cauliflower with olive oil and season with salt. Place it in a 180°C oven for 25 minutes.
4. While the cauliflower is in the oven, you can make the cheese sauce. Start by melting the butter in a pot. Once it’s foaming, add the flour and cook it out for 34 minutes.
5. Then, add the milk and whisk until you have a smooth white sauce.
6. Add 80% of your grated cheese and over a low heat whisk until it’s all incorporated.
7. Pour this over the cauliflower and top with the remaining cheese.
8. Place this back in the oven on the grill setting and grill until golden brown.
