Alright you guys, once again I filmed an entire week of easy, wholesome and delicious vegan meals! Lots of healthy and balanced recipes to be found in this one, such as my new favorite Ricepaper Tteokbokki Soup. It’s so good and so simple to make!

INGREDIENTS & NOTES:

#1 Cinnamon Apple Müsli

1 apple
1 handful of raising
1 dash of cinnamon
1 splash of apple juice
½ cup of quick cooking oats (45g)
1 handful of crushed walnuts
1 tbsp ground flax seeds
non dairy milk of choice

→ serves 1

#2 Tofu Tahini Dip

150g semifirm tofu, i used korean tofu :)
1 tbsp white tahini
1 handful of basil, frozen or fresh
salt to taste (start with ½ tsp)
1 ½ tbsp white wine vinegar, or more to taste
add lots of other spices of choice!
¼ cup non dairy milk (60ml) (or more if desired)

→ serves 34

#3 Corn Omelette Pancakes

1 onion, cut into chunks
oil for the pan
23 handfuls of fresh baby spinach

1/2 cup (65g) cornflour
dash of ras el hanout (or some other spice mix you prefer)
dash of smoked paprika
¼ tsp garlic powder
⅓ tsp salt
½ tsp baking powder
1 tbsp nutritional yeast
½ cup (125ml) water
plus some more oil for the pan
toppings of choice! like sesame seeds, vegan chili mayo ...

→ serves 1


#4 Quick Couscous Dinner (eyeballed most ingredients here)

½ cup couscous (75g)
½ cup hot boiling water (125ml)
generous pinch of salt
spices of choice

½ can chickpeas (120)
about 5 tbsp store bought tomato sauce
1/3 cup water or so (80ml)
2 handfuls fresh baby spinach

deep fried cauliflower bites or whatever else you can find; cherry tomatoes, hemps seeds …


#6 Cozy Almond Drink

1 tbsp almond butter
1 cup almond milk (125ml)
a dash of cinnamon
a pinch of pumpkin pie or gingerbread spice
optional: 12 tsp maple syrup

#7 Pumpkin Bread Muffin

Follow this Pumpkin Bread Recipe here:
Add 1 handful chopped vegan white chocolate
Fill up 10 greased muffin molds (or as many as you can get out of this)
Bake for 2225 min at 180C


#8 Rice Paper Tteokbokki Soup

1 onion
1 carrot
2 cloves garlic
2 tsp vegetable broth powder
1/2 tsp gochujang (or more! i like ¾ tsp)
2 cups vegetable broth (500ml)
1 tsp rice vinegar
1 tsp tomato purée

68 rice paper sheets (square shaped for better shape)
a deep dish plate filled with room temp water

½ cup chickpeas, rinsed and drained (120g)
100g firm tofu
2 handfuls of fresh spinach
12 spring onions, chopped
sesame seeds for serving

→ serves 1

#9 Rice Noodle Soup

1 onion
1 carrot,
2 cloves garlic
1 handful of dried mushrooms
2 tsp vegetable broth powder
2 tsp miso paste
23 tbsp tomato sauce
2 cups vegetable broth (500ml)
1 tsp rice vinegar
salt to taste, if needed

1 handful of frozen raw cauliflower
⅓ cup frozen peas (45g)
50g glas noodles
sesame seeds for the top

→ serves 1

#10 Artsy Smoothie Bowl

light base:

1 ½ frozen bananas, cut into chunks
50g semi firm tofu (eye balled this)
1 tbsp cashew butter
¼ tsp cinnamon
soy milk, about ⅓ cup? (80ml)
1 tbsp vanilla protein powder

pink part:
½ frozen banana, cut into chunks
1 cup frozen blackberries (150g)
½ cup non dairy milk, more if needed (125ml)

granola, puffed quinoa
