INGREDIENTS + NOTES:

#1 Peanut Butter Apple Bites 0:37

1 apple, chopped
a splash of water
¼ tsp cinnamon
1 tbsp agave syrup, or to taste
23 tbsp chunky peanut butter
pinch of flaky sea salt (or just regular salt)
34 tbsp oats
2 ½ tbsp ground flax seeds
if needed: 1 tbsp plant milk
→ serves 12
→ shape into energy balls, cookies, bars


#2 Spicy Potato Bites 2:17

23 medium potatoes, cut into cubes
2 tsp sriracha, or to taste depending on how spicy you want it
23 tsp vegetable oil
generous pinch of salt
hummus sauce:
1 tbsp store bought hummus
2 tsp lemon juice
1 tbsp non dairy milk or water

basil for serving, optionally more hot sauce
→ serves 1


#3 Waffle Cake with Chocolate Cream Cheese Frosting 03:18

small batch chocolate frosting:

60g vegan cream cheese at room temp (2.1 oz or 2 heaping tbsp)
40g vegan butter at room temp (1.4 oz or 2 heaping tbsp)
½ tsp vanilla extract or a few drops vanilla aroma
2 tbsp unsweetened cocoa powder
120g powdered sugar (1 cup), added in 23 stages

a squeeze of lemon juice
a drizzle of sriracha
pinch of salt
pinch of chili flakes and or garlic powder

#5 Apple Pie Corncakes 7:54

3 corn cakes (or rice cakes)
3 tbsp vegan cream cheese or vegan sour cream
23 tbsp applesauce
dusting of cinnamon
→ eyeball amounts depending on preference


#6 Healthy Banana Fudge with Cookie Topping 8:35

2 ripe bananas
150g cashew butter (⅔ cup minus ½ tbsp)
30g unsweetened cocoa powder (3 tbsp)
3 tbsp maple syrup
1 tbsp powdered sugar (or 4 tbsp syrup / powdered sugar total)
1 tsp vanilla extract or a few drops vanilla aroma
¼ tsp salt
2 ½ tbsp softened vegan butter
30ml vegan cream (⅛ cup or a splash), optional
if needed 1 2 tbsp non dairy milk, to help this mixture blend
45 vegan cookies, crushed

→ use an 1820cm square baking tin (7 8 inch)

#7 Chickpea Mint Wraps 10:52

2 spring onions
1 handful of cherry tomatoes
1 tbsp olive oil
1 tsp hemp seeds
pinch of salt
pinch of chili flakes
120g chickpeas (¾ cup)

2 medium to large tortillas
2 tbsp vegan cream cheese
½ avocado
a few fresh mint leaves

→ yields 2 wraps
