what i eat in a *super busy* week / home-cooked meals as a vegan uni student🍴

recipes:

flatbreads: 350g flour, 150g whole wheat flour, 10g salt, 2 tbsp olive oil, 1 tsp fresh yeast, 1 tbsp sugar, 300g warm water
*method*: mix yeast with water and sugar and let sit for 12 minutes. add flour and salt, knead until a smooth dough forms and rest on the counter for 56 hours OR in the fridge overnight. divide into 6 pieces, roll out and fry on medium heat.

cauliflower salad: 56 florets, torn into small chunks + 1 can chickpeas + 1 tsp curry powder, 1 tsp thyme, big pinch of salt, 1 tbsp olive oil – 200°C for 20 minutes
56 cherry tomatoes, quartered + 1 tbsp pomegranate molasses + pinch of salt
handful fresh parsley, handful fresh arugula, black pepper
tahini + a small splash of apple cider vinegar + a splash of water to thin

red lentil falafel: 300g red lentils (soaked), 1 red onion, 4 cloves of garlic, 1 bunch parsley, 1 tsp each salt, cumin, coriander, 34 tbsp chickpea flour (@essalavanessa on IG)
