I love hosting a good party, but I love to make food ahead. This saves so much time and energy, too, so you can just be present with your guests.

Appetizer: Raw Beet Lasagna and Smashed potatoes
Salad: Rustic Tomato
Soup: Asparagus Soup
Main: Zucchini Boats
Dessert: Chocolate Mousse

Asparagus Soup
1 small onion, chopped
46 portobello mushrooms, chopped
36 garlic cloves, minced
2 carrots, chopped
2 pounds of asparagus, trimmed, using the woods scrapes
1 1/2 cup chickpeas
3 cups of veggie broth
Oregano and basil, to taste
Salt and pepper, to taste

Instructions:
Sauté onions, carrots, mushrooms, and garlic. (I used my pressure cooker on Saute)
Add in the remaining ingredients. ( I used the Soup button on my pressure cooker) If using a pot, bring the soup to a boil and reduce to a simmer until the asparagus is forktender.

Chocolate Mousse
4 oz of your favorite chocolate, melted
12 oz silken soft tofu
6 soft dates, pitted

Blend all ingredients.
