Today, I will show you a very easy and simple recipe for Crawfish Monica. This creamy spicy pasta dish, traditionally served at the New Orleans Jazz Fest, is named after Chef Pierre Hilzim's wife Monica. Chef Hilzim created Monica Crawfish in 1981. It has been a Jazz Fest staple since 1982. My homemade version is perfect for beginner cooks looking for a flavorful weeknight meal. Packed with juicy crawfish tails and a rich, decadent sauce, this Crawfish Monica will become a family favorite! You can substitute the crawfish with shrimp to make an amazing creamy pasta dinner.


INGREDIENTS
12 oz Rotini Pasta
12 oz cooked peeled crawfish tails
2 Tbsp olive oil
1 Tbsp unsalted butter
3 scallions
3 cloves of garlic
1 1/2 tsp Creole seasoning
1/2 tsp lemon pepper
1/2 tsp onion powder
1/4 tsp cayenne (to taste)
1 3/4 cup heavy cream
1 Tbsp Loisiana hot sauce
garnish with fresh scallion green tops
garnish with fresh parsley
