Wagyu beef, with its signature marbling, has secured its position as a delicacy in the West, and demand is also rising within Asia.
A national competition commonly known as the “Wagyu Olympics” is held every five years to bring together the best wagyu cattle. The 2022 event was held in Kagoshima Prefecture, and 438 cattle from 41 prefectures were entered into the breeding cattle division.
A study of the competition’s trajectory shows how domestic livestock underwent breeding improvements to become a delicacy and eventually a leading export product.
Japan’s beef export value has reached fifty billion yen, but the government aims to more than triple that number by 2025 and have it led the way in the agricultural and marine products and food categories. While the global shift towards health awareness rise, it is also expected to generate an appreciation for wagyu tallow.
