When the season changes and it's getting chilly out there, I crave pasta. So I made a couple of bowls of pasta which are part of the underground scene in Rome. You can find them in some restaurants but you'd be ordering them only if you knew they existed or, in my case, if you're from Rome.
These kinds of pasta are truly satisfying, easy to make, and packed with flavor, so when you visit Rome, I always suggest trying something different than the classic Carbonara or Cacio & Pepe. You won't regret it.
