The BEST tasting Fried Shrimp (how to peel season and cook)

Hey y'all. I'm Jan. Today, we're making Fried Shrimp!! I've known how to fry shrimp since before I could even fry an egg, properly. My dad loved shrimp and seafood in general. We had lots of shrimp filled weekends, cooked any and every way you could want them (fried, popcorn, sauteed, boiled, scampi).


I recommend buying fresh, raw shrimp still in their shells and peeling them yourself. Can get in seafood department of your grocery store, or seafood stores in town that sell them in all sizes. I prefer large shrimp. But my store only had small and jumbo, so I opted for the jumbo size.
(Jumbo Shrimp specifically will have "21/25" or "20/24" on the sale price sign. Those numbers mean you'll get 2125 shrimp per pound.)

Peel your shrimp and pat them all dry with a paper towel. Make sure you flip them over and dry the back, too. If they're not dry, your batter will come off in the frying process!
You can use a frying pan, fry daddy, deep fryer, boiler, or whatever you got.

You'll need 2 bowls. One for egg wash, one for batter.
This typed recipe will be for 1lb of Jumbo Shrimp
Beat 2 eggs with either Whole milk, or a bit of water. About 1/4 cup will do it.
1/2 tsp of Old Bay seasoning
1/2 tsp of salt, onion powder, garlic powder
1/4 tsp pepper
(Old Bay has white and black pepper and paprika in it, already)
*You can add a pinch of cayenne pepper if you like a kick.

In the other bowl, 1 1/2 cups all purpose flour
1 tsp Old Bay
1/2 tsp Salt
1 tsp Onion powder
1/4 tsp pepper
Whisk together.

Take each shrimp and dredge it slightly in the flour mixture.
Then dunk it completely in the egg wash
Then back into the flour mixture. And this time, coat it very well with the flour.

Lay your shrimp out on a cooling rack and let them sit for 5 minutes once they're all battered and ready to go.

Make sure your oil temp is between 350F and 375F (180C). If the oil isn't hot enough, your batter will fall off in the pan.

If you use the size frying pan I did, add only about 10 shrimp, one at the time.
Fry them for 1 1/2 2 minutes. Very important to time this!
Flip them over for another 1 minute, max 1 1/2 minutes.
*Don't over cook these shrimp!! They'll be rubbery and you may not enjoy them. Fry them for a max of 3.5 to 4 minutes. And that's only if you're frying Jumbo shrimp.
If you're using medium or large, fry for max 3 minutes.
Spoon them out with a slotted spatula or spoon onto another cooling rack with paper towel to let the grease drain.
Let sit for less than 5 minutes. Get your favorite shrimp dip and dig in!

These shrimp were so good that I'm going to make more this week. Lol
