❤ Taiwanese Style Tomato Mackerel Recipe Cooking with Fen & Lady First
Ingredients:
Mackerel 600g
Tomatoes 4
Garlic cloves 8
Ginger 100g

Seasonings:
Salt 1g
Light soy sauce 1 tablespoon + 12 tablespoons for cooking on stove
Rice wine (first distillation) 1 tablespoon

Main tools:
Stainless steel Chinesestyle wok

❤Directions:
1. 01:28 Handling Mackerel:
Clean the mackerel, remove the head, tail, innards, and blood clots along the spine.
Use a mallet or knife to gently pound and cut the fish into pieces.

2. 03:29 Adding Ingredients:
Arrange the mackerel pieces in a deep dish, place garlic cloves, ginger slices, and chopped tomatoes on top.

3. 04:53 Cooking in Electric Cooker:
Pour 130cc of water into the outer pot of the electric cooker, cover with the lid, and cook for about 20 minutes after the cooker switches off.

4. 05:44 Cooking Tomato Sauce on Stove:
Once the fish is cooked, transfer the broth (without the fish pieces) into the wok, add a suitable amount of soy sauce, and continue simmering until the sauce thickens slightly.
Taste the tomato sauce for saltiness and adjust as needed. When the sauce reaches the desired consistency and saltiness, turn off the heat.
Arrange the cooked mackerel on a plate, drizzle with the tomato sauce, and serve.
