We have made these a few times now and love them each and every time. They seem like they should be harder to make than they are. We had a little beef left over that we froze. Ellinor was the absolute biggest fan. She is weird about spice at times, but she chowed down 2 full quesadillas!!!! This should definitely go in your Taco Tuesday rotation!

4 ish ancho chiles
