Beef Enchiladas - Cheesy and Delicious Beef Enchiladas that will feed a crowd!

Recipe video on how to make Beef Enchiladas. Simple dish that goes a long way if you are feeding a crowd. Family and friends will absolutely love it! You can even make this a day ahead, store in the refrigerator and bake when you're ready! The recipe is below, enjoy!

1 lb. Ground Beef
1/2 Onion, chopped
16 oz. Cheddar Cheese, shredded
1 16oz. can Refried Beans
1 19 oz. can Enchilada Sauce
7 to 8 Soft Flour Tortillas
2 tbsp. Taco Seasoning
1/4 c. Chopped green onions (optional)

Preheat oven to 350 degrees.

Brown ground beef and onion until fully cooked, drain fat and return to pan. Add 1/4 cup of enchilada sauce, refried beans and 1 to 2 tbsp. taco seasoning. Mix well.

Lay out tortilla and add approximately 3 tablespoons of beef and bean mix on to the tortilla. Top with a good handful of shredded cheese and roll up the tortilla.

Poor about 1/4 cup of enchilada sauce onto the bottom of a 9 x 13 baking dish, enough to wet the entire bottom of the pan.

Place filled tortilla seam side down in 9 x 13 baking dish. Continue to stuff and roll your beef enchiladas until the pan is filled up. This usually makes 7 to 8 beef enchiladas. Pour remaining enchilada sauce on top of the enchiladas. Top with cheddar cheese and green onions. Bake at 350 degrees for approximately 25 to 30 minutes until cheese is well melted. After you remove the dish from the oven, let it sit for 20 to 30 minutes and serve.
