This Pani Puri Recipe is special to me because it is my mother’s recipe. As a child, I have made suji ke golgappe with her using this pani puri recipe many times.
I have not just shared a pani puri recipe with you today but also 2 flavours of pani and a papdi chaat as well.

Recipe :

Suji ke Golgappe
Preparation time: 10 minutes
Cooking Time: 5 minutes
Serves: 45

Ingredients:
For Golgappe:
250g Suji (Rava)
50 ml hot oil
Hot water to knead
Oil to fry

For teekha pani:
1 bunch coriander leaves
½ bunch mint leaves
1 tsp roasted cumin powder
1 tsp chat masala
1 tsp salt
½ tsp black salt
2” ginger
5 green chilies
½ tsp tartaric acid/ 6 tbsp lemon juice
Boondi to garnish

For Meetha Pani:
1 cup imli water
50g jaggery
1 tbsp oil
½ tsp cumin seeds
½ tsp nigella seeds
½ tsp fennel seeds
1 tsp red chili powder
1 tsp roasted cumin powder
1 tsp chat masala
1 tsp salt
½ tsp black salt
Boondi to garnish
To serve: boiled potatoes
Boiled ragda (white matar)

Method:
Add hot oil to the rava and rub well. Add hot water a little at a time and knead to a soft dough. Knead the dough well. Break into lemon sized balls and roll into long puris. Fry immediately in hot oil till puffed and crisp. Remove and allow to cool.
For teekha pani, mix together all ingredients and grind to a smooth paste with 1 cup water. Pass through a sieve and add 1 cup more water to adjust to taste.
For meetha pani, heat oil in a pan, add the cumin, fennel & nigella seeds, as the seeds splutter, add all the other ingredients with 1 cup wate ran dbring to a boil. Simmer for 34 minutes and remove from heat add 1 cup water to adjust consistency.
Serve.
