Hey friend, today we are preserving some of my homegrown potatoes for the freezer! I have 6 Homemade recipes to fill your freezer with convenience potato products. We are making Crispy French Fries, Hashbrowns, Smiley Fries, Crispy Potato Balls, Potato Waffles and some Gluten Free Gnocchi!

French Fries:
Cut and soak for 20 minutes in water, rinse well. Boil in water for 2 minutes, strain immediately and rinse with cold water to stop the cooking process. Lay out to dry completely before frying in very hot oil for 5 minutes. Work in small batches to not overcrowd. Allow to cool completely before storing in the freezer. To prepare frozen fries, Add to hot oil for 10 minutes or until heated through and crispy or bake on a cookie sheet, coating the fries with oil and salt at 425 degrees for 15 minutes.

Hashbrowns:
10 medium potatoes shredded
6 tbsp butter
cook on stove top for 15 minutes
add
4 tbsp of arrowroot powder
1 cup flour
4 tsp redmond real salt
1 teaspoon garlic powder
mix together and shape into rectangles, fry 5 minutes per side or until golden brown.
warm up on the stove top or in the oven at 350 for about 10 minutes

Smiley Fries:
6 cups mashed potatoes
3 tbsp arrowroot powder
1 cup flour
2 tbsp redmond real salt
Combine and roll out dough to 1/4 inch thick, cut circles, make smiley faces and fry in oil for 45 minutes per side until golden brown.
Heat up in the oven at 350 for 10 minutes.

Crispy Mashed Potato Balls:
2 cups plain mashed potatoes
2 tbsp arrowroot powder
1/2 cup parmesan cheese
1/2 tsp garlic powder
1/2 tsp onion powder
1 tsp salt
mix well and roll into small balls, coat them with flour or arrowroot powder. Fry in VERY hot oil for about 810 minutes or until all sides are golden brown and crispy.
Reheat in the oven at 350 for 10 minutes.

Potato Waffles:
3 cups prepared mashed potatoes
2 tbs ghee or butter melted
1/2 tsp garlic powder
1/2 tsp onion powder
3 eggs
1/2 cup flour
1 1/2 cups shredded cheddar cheese
1 teaspoon salt

Combine ingredients and add to waffle iron, spreading out thick batter.
To reheat put in 350 oven for 1015 minutes or until heated through.

Gluten Free Gnocchi:
2 lbs mashed potatoes
2 cups gluten free 1:1 flour
1/2 cup parmesan cheese
1/2 ricotta or cottage cheese
1 egg
1 tsp salt.
