Ingredients for Spicy Chicken Leg Roast Recipe:

(TspTeaspoon; TbspTablespoon)

Chicken full leg 3 (500600 gms)

Masala powder:
Coriander seeds3 tsp
Cumin seeds1 tsp
Cloves 4
Cinnamon 1 small
Byadgi Chillies10 ( around 1618 gms)

Marinade:
Masala powder roasted & powdered (56 tsp)
Ginger garlic paste 2 tsp
Salt 1.25 tsp
Lemon juice2 tsp
Groundnut or any other oil 2 tbsp
Water1 tbsp

Tempering:
Fennel seeds 1/2 tsp
Curry leaves 1012
Garlic crushed 34
Byadgi Chillies2 (cut)

Other ingredients:
Onions sliced 2 medium (150 gms)
Oil 2 tbsp

Preparation:

To make the masala, add all the whole spices in a pan and roast it on low heat for 23 mins.
Remove and allow to cool.
In the same pan, heat oil and then add the Byadgi chillies.
Fry on low heat for 23 mins. Remove.
Grind the spices and chillies into a powder.
Marinate the chicken with the spice powder & other ingredients specified. Set aside for 3060 mins.
Slice the onions.

Process:

Heat 2 tbsp oil in a pan and add the items for tempering. Give a stir and then add the sliced onions.
Fry on medium heat for around 34 mins till light brown and then add the marinated chicken pieces. Fry on medium heat for 23 mins and then flip. Repeat on the other side.
Add a splash of water and then cover & cook on low heat for 10 mins.
Remove lid and then flip the chicken legs. Baste with the oil in the pan.
Again cover & cook for another 10 mins till the chicken is cooked and browned.
