•Ingredients: # soy sauce pickled beef
Beef shank: about 1700 grams 0:30,
Spices: Some cassia. A small piece of jerusalem artichoke. 2 alpinia globosum. 45 star anise. 2 slices of angelica dahurica. 2 tsaoko(seeds removed), 1 bay leaf. Dozens of szechuan peppercorns.
Seasonings: green chinese onions about 15cm, ginger 45 slices.
Flavorings: light soy sauce 100ml, soy sauce 50ml, soybean sauce 50 grams, Chinese baijiu 20ml.
•We can make it the former night, then pickle it in the balcony for 78 hours. If it's very hot at home or if it's in summer, just keep it in the refrigerator compartment.
After being pickled for one night, the beef has absorbed the flavors of the ingredients. Then add water in pot and start cooking. Just use water of room temperature. The water is enough to submerge the beef.
•Add cold water in pot and start cooking the beef. Start timing after water is boiling and cook it for 15 mins. Then check if there is any scum on it. If so just skim it off. Next turn to low heat and cook it for about 2 hours. Make sure the water is boiling slightly all the time. But the time is not fixed. If the beef is very tender, then just cook it for 1.5 hours. But we might cut it into different sizes, and the heat might be different too, after cooking it for some time, take a chopstick, if we can easily poke it into the beef, then it's welldone.
