⭐CALDO VERDE I made 3 servings but I suggest at least doubling this. My FAMILY LOVED THiS!!

4 Russet Potatoes cut half in thin slices and half in bit size pieces.
1/3 package of Linguica Portuguese sausage
1/2 chopped white onion
5 cups chicken broth or bouillon I used 4 cups broth and then 1 cup water plus bouillon
1 clove chopped garlic feel free to use more
1/2 bunch kale or can use collard greens or probably most any green would work

Cut sausage into rounds, then fry in a pan with a little oil. When browned on at least one side, remove from pan. Set aside. Add chopped onions to pan and fry until translucent. Add a little broth or water if you want so it doesn't burn. Add in chopped garlic. When that has cooked add in half of the thin sliced potatoes (these are the ones that will thicken the soup) then the broth and/or water and bouillon. Let cook until almost soft and then add in the other half of the potatoes and the kale (or collard greens). Add pepper and or salt to taste and add in the sausage, reserving a few pieces for garnishing each plate.

*garnish with a sliver of parmesan cheese if you have it, and a drizzle of olive oil.

Would be great served with a piece of toasted sourdough bread.
