MENU

BREAKFASTS
1 toasted bagel with 1 egg and hot sauce
1 toasted bagel with egg and shredded carrot
1 toasted bagel with 1 banana and 1 sliced roma tomato

LUNCHES
1 bowl carrot soup
1 bowl carrot soup
1 bowl with rice, carrot fritter, veggie mix, 1 fried egg and crispy chickpeas

DINNERS
3 bowls with rice, carrot fritters, veggie mix, and crispy chickpeas
2 with scrambled eggs

⭐BAGELS

1 1/3 cup flour
1 cup greek yogurt I used 1 small container
2 tsp baking powder
3/4 tsp salt
1 egg white for brushing on the bagels at the end

*water enough to just blend in (won't need this if you have the full 1 cup of greek yogurt)

Mix flour with baking powder and salt, then add yogurt and mix. Knead for 45 minutes then roll into bagels. Brush egg white onto the bagels then add any toppings. Bake at 375 for 25 minutes.

⭐CARROT SOUP Makes 2 servings

1 lb carrots I was 2 carrots shy
1/2 can chickpeas or use dried
vegetable bouillon to taste
1/8 tsp cumin
1/8 tsp curry
12 tbs olive oil or whatever oil you want to use
pepper to taste

Topping

Bagel croutons or use bread croutons. Just cut into squares add garlic salt and maybe some parsley then toast in toaster oven until crispy.

Boil and then simmer a good long while until flavors have time to develop. The carrots will sweeten over time. Then use hand masher or immersion blender. Add to blender if you want it velvety smooth.

Optional add ins coconut milk. Could also use real onions to saute before adding carrots and chickpeas.

⭐CARROT FRITTERS

2 carrots shredded
1/3 flour
1/8 tsp cumin
1/8 tsp salt
1 egg

Add all ingredients and fry

*some people like to add curry powder into their carrot fritters

would be good with raisins
