Smoking Salmon and Trout Using the Big Chief Smoker

The LuhrJensen Big Chief smoker is an affordable and simple to use smoker that is small on price and big on taste. Here I demonstrate how I use the Big Chief smoker to produce consistently delicious, moist, and safe to eat smoked salmon and trout.

Directions:
Load smoker with fish with thickest cuts on the bottom
Run two full pans of chips thru the smoker. I prefer alder and apple
Preheat oven to 350 F
Line cookie sheets with foil and lightly oil
Spread salmon/trout on cookie sheets and brush with honey or jalapeno jelly for a spicer mix
Cook in oven for ~15 minutes until edges darken
