Ingredients:
6 large Eggs
24 oz 1% low fat cottage cheese
16 oz Mushrooms, sliced
9 oz Green Giant Steamers Frozen chopped spinach
1 medium Onion
1â2 cup Plain unsweetened almond milk
1â3 cup Shredded parmesan cheese
2â3 cup Lucerne Lowmoisture partskim mozzarella finely shredded cheese
1 tsp Garlic powder
1 tsp Dry mustard
1â4 tsp Black pepper, to taste
cooking spray
Steam and squeeze dry spinach. In a large pan on medium heat, sautee mushrooms and onions until softened. While veggies are sauteing, add eggs, cottage cheese, milk, garlic, dry mustard and black pepper to a blender or food processer and blend until smooth. Once veggies are softened, add in spinach and let all continue to cook together for 35 minutes.
Prepare pan(s) with cooking spray and add sauteed veggies to bottom(s). Top with cheeses. Pour egg mixture on top. Bake, uncovered at 350 F 3545 minutes or until egg is set in the middle and it is slightly browned.
