Making 2530 dumplings

Dough:
Dumpling flour or all purpose flour: 180 g 1+1/4 cup
Corn starch: 30 g 1/4 cup
Salt: 1 g
Boiling water: 60 g, 1/4 cup
Room temperature water: 60 g, 1/4 cup

Shrimp fillings:
Small deveined shrimps: before defrosting: 500 g, after defrosting: 400 g
Regular soy sauce: 10 g, 2 teaspoons
White pepper powder: 1 g, 1/4 teaspoon
Chicken leg with skin and fat: 170 g
Fivespice powder: less than 1 g, 1/8 teaspoon
Regular soy sauce: 5 g, 1 teaspoon
Salt: 2 g, 1/4 teaspoon
Sesame oil: 12 g, 1 tablespoon
Ginger paste: 5 g, 1 teaspoon
Green onion white part: 1 small piece, 7 g
Egg white: 1

Start with boiling water, medium low heat, steam for 6 minutes
