I have wanted to share this recipe with you for quite some time, I stumbled upon it a while ago and really loved the dish from the moment I saw it. Eggs are poached in a delicious tomato sauce, very easy to prepare, healthy, comforting, flavorful, wonderful colors, definitely a must try recipe. It is usually served for breakfast and it’s perfect for brunch on lazy weekends.

This dish is best served right away after cooking alongside some crusty bread. Some prefer their yolks runny some prefer them hard, just adjust the cooking time accordingly to your preference. Try it out, enjoy it with your family and friends, everybody will be delighted for sure.


Ingredients
Makes about 23servings
1 tbsp olive oil
1 medium onion, diced
2 cloves garlic, diced
1 can diced tomatoes
1 tbsp tomato paste (optional)
herb seasoning
salt and freshly ground black pepper
3 eggs
fresh basil for garnish

Directions
Heat olive oil in a large frying pan over medium heat.Add onion and garlic and cook for about 5 minutes until the onion begins to soften.

Stir in diced tomatoes. Season with herbs, salt and pepper and allow to simmer over medium heat for 1015 minutes until it starts to reduce.
Crack the eggs over the tomato mixture. Cover the pan and simmer for 1015 minutes, or until the eggs are cooked.
Garnish with fresh basil and serve with crusty bread.
