咸菜豆腐汤所需材料
包装咸菜
水嫩豆腐
猪瘦肉需腌制
水梅
生姜
番茄
青葱
调味盐 胡椒粉 鱼露 麻油

Ingredients (Diana Aw)
1. Salted vegetable, half pkt cut thin strips
2. Tofu half box, cut smaller cubes and place in water
3. Marinated lean pork
4. Ginger small piece, julienne
5. Tomato half, cut smaller
6. Chilli padi 1pc, make a few pat
7. Sour plum 1pc, remove seed
8. Spring onion 1 stalk, cut 23cm long

How to marinate pork
1. Smashed a piece of ginger and place in a bowl. Add hot water and let it soak till cool
2. Add little salt and ginger water to the pork and mix till the pork has absorbed the ginger water. Add a little water and mix again.
3. Then add a little tapioca flour and mix well.
4. Lastly add a little oil and mix well

Seasoning
1. Salt little
2. Pepper little
3. Fish sauce little
4. Sesame oil little

Method
1. Heat wok with little oil, add in ginger, chilli padi and salted vegetable and stir fry for 2min till aromatic
2. Add water and sour plum and bring to boil. Add salt, pepper and fish sauce and boil for a minute
3. Add in lean pork, tomato and tofu and bring to boil.
4. Add sesame oil and mix well
5. Sprinkle some spring onion.
6. Serve and enjoy!
