Restoring Old Knives - Removing the Handles and Rust

I found two knives at a Thrift Store and plan to restore them with new handles. They have great patina and will just be sharpened after we get the new handles built.

The maker of the knives is the Ontario Knife Company and are from the Old Hickory line, first introduced in the 1920s. I have no clue how old these particular knives are, but they look well used and worn.

After removing the handle scales, held in place with 2 piece brass rivets, I found a lot of rust that needed to be removed. We'll replace one handle with Hickory to pay respect to the "Old Hickory" name that these knives were given, and the other in light Maple.
