What others ways can we use up all this extra zucchini? I'm always looking for new ideas, and this time around we're going to attempt to make applesauce from zucchini. This is not an approved NCHFP / USDA recipe this is just me experimenting in my kitchen. If you decide to make this, do so at your own risk. 56 pretty large zucchini went into my roasting pan, and in total I ended up adding two jugs of apple juice. It cooked down for a really long time about 24 hours. Then I ran it through my food processor to break it down even further and seasoned it, as I would normal apple sauce.
