*This Chipotle Chicken Asado recipe is a wonderful copycat recipe! The pollo asado marinade has a deep smoky flavor from the peppers with a slight sweetness from the adobo sauce and the lime juice helps round out all of the flavors. It’s delicious and comes together fast, which makes it perfect for easy weeknight meals!

*These easy shrimp tacos are loaded with flavor and are the perfect solution to busy weeknights. Combine the seasonings, rub them into your raw shrimp, bake them in the oven, and top with a crispy broccoli slaw. Dinner’s ready in under 20 minutes!

Instant Pot Refried Beans
1 cup dried pinto beans, rinsed well and picked through
4 tsp olive oil
1/2 onion, diced
3 cups chicken broth
1 teaspoon cumin
12 tsp salt

Rinse pinto beans well and add to instant pot. Pour in your chicken broth, cover and cook on high pressure for 45 minutes. Let pressure release naturally for 10 minutes.

Drain the beans (Saving the liquid if using) in a colander and set aside. Turn the Instant Pot to Saute and add your olive oil and diced onions. Saute the onions for a couple minutes, then add the beans.Mash the beans with a masher or use an immersion blender, adding liquid back to the beans until you get a creamy consistency. Season with Cumin and salt.
