Papas Rellenas Cubanas are a traditional Cuban dish made with picadillo and mash potatoes! These potatoes croquettes are easy to make and filled with delicious ground beef. In fact, whenever I make carne molida, I make sure to stew it for 2030 minutes so that it comes out soft. I even use my homemade sofrito to season the ground beef. It gives it that true Hispanic flavor. These meat and potato appetizer are delicious and perfect for the holidays, family gatherings and more! Recipe for Papas Rellenas:
Meat Filling
1 lbs Grassfed Ground Beef
½ White Onion
½ Green Pepper
4 Garlic Cloves
1 tsp Dominican Orégano
2 tbsp Sofrito *optional
¼ tsp Cumin
1 tbsp Cilantro
3 tbsp Tomato Paste or ¼ cup Tomato Sauce
½ tbsp Sazón con Achiote
2 tbsp Diced Olives *optional
Kosher Salt
Black Pepper
2 cups of water
Olive Oil

Potato Dough
5 Idaho or Russet Potatoes
2 ½ tbsp Cornstarch
2 tbsp Salted Butter
1 ½ tsp Garlic Powder *optional
2 cups Plain Bread crumbs
2 Eggs
All Purpose Flour
Vegetable Oil for Frying
Kosher Salt
Black Pepper
