I am sharing you my version of "Pancit Bato" a famous recipe in Bicol Region that originated in the municipality of Bato Camarines Sur. My family and friends love this version, hope you'll love it too. Bon appetit. All ingredients are optional, modify as per your liking. Take everything in moderation. "Health is Wealth".
Pancit Bato
Ingredients:
Sauteing:
***Parboiled Pork Belly & Chicken Gizzard
1 tsp ground black pepper
2 cups water
3 tbsp olive oil
3 tbsp garlic
1 tsp spicy chilis
2/3 cup onions
***marinated Chicken Liver
2 tbsp Filipino Fish Sauce
1/3 cup dried small Shrimps (soak in water 10 mins.)
1 cup Carrots
1 cup Green Sweet Peas
350 grams Cabbage
10 cups water
1 tsp ground black pepper
1/4 cup dark soy sauce
1 tbsp vinegar
1 tsp brown sugar
1 tsp chicken powder
1 tbsp liquid seasoning
500 grams Pancit Bato
2 tbsp olive oil
Garnish with:
3 pcs spicy chilis
3 stalks spring onions
Parboil:
Water: enough to submerge all ingredients
1 sliced crushed ginger
1 tbsp coarse salt
400 grams Pork Belly
1 cup Chicken Gizzard
Liver Marinade:
150 grams Chicken Liver
1 tsp ground black pepper
1 tbsp vinegar
1 tbsp dark soy sauce
Cooking Time: approximately 45 minutes
