A creative twist on Chicken Parmesan for those who cannot chew food or who need to be on a soft food diet.
2 slices sourdough bread
preboiled or prebaked chicken
12 Tbs olive oil
1 tsp leaf oregano
1/2 tsp dried basil
1 Tbs chopped fresh parsley
3 Tbs marinara sauce
Parmesan cheese, grated
Mozzarella cheese, shredded
Place bread slices in food processor to make crumbs;
Add olive oil, oregano, basil & parsley to bread crumbs;
Puree chicken in food processor;
In a small baking dish layer chicken, marinara, parmesan, mozzarella & more marinara;
Top with bread crumbs;
Cover with foil & bake at 350 degrees for 2025 minutes.
