Turkey Chili
1 pound ground turkey
3 cloves garlic, minced
1/2 of a yellow onion, diced
1 red bell pepper, diced
1 tablespoon olive oil
1 can tomato sauce
1 can diced tomato
2 cans kidney beans, drained
2 can black beans, drained
23 tablespoons Chili powder
1 tablespoon Cumin
Salt, a generous amount
Pepper
Garlic salt, to taste
12 tablespoons Garlic powder
2 tsps brown sugar
In pot, heat olive oil & sauté onion until fragrant
Add bell peppers. Add garlic & green chilies and cook for 12 min
Add ground turkey to pot and cook until slightly browned, season with salt & pepper
Add beans, tomato sauce, diced tomatoes and rest of seasoning
Let simmer for 34 hours or longer (if using crockpot, 45 hours in low is best)
Top with sour cream & cheese.

Gluten Free Cornbread
1 1/4 cups ground cornmeal
3/4 cup gluten free all purpose flour
1/4 cup sugar
1 teaspoon salt
3 teaspoons baking powder
1 1/3 cups almond milk/milk of choice
2 eggs, beaten, room temp
1/2 cup butter, melted
Preheat Oven: Preheat oven to 425F
Heat Up Skillet: While the oven preheats, place cast iron skillet on the middle rack (you can skip this step if you’re using a normal pan)
Mix dry ingredients In a large bowl. Add wet ingredients: Whisk in the milk, eggs and melted butter (leave about 1 tablespoon for skillet) until well combined
Remove cast iron skillet from the oven (carefully!) and reduce oven temperature to 375F.
Brush skillet with butter, pour batter into skillet
Bake for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean
Let cool for about 1015 mins before slicing
Serve with butter & honey

White chicken chili
1 tbsp. extravirgin olive oil
1 small yellow onion, diced
1 jalapeño, seeded and minced / can sub for canned diced jalapeño
34 cloves garlic, minced
2 small cans of green chilies
2 lbs of boneless skinless chicken thighs (cooked & shredded)
5 cups chicken broth
salt, pepper, garlic powder, cumin & garlic salt (to taste)
2 cans white beans
1 can corn
1/2 cup sour cream
Cilantro, for garnish
1/4 cup shredded Monterey Jack
Directions
*For chicken I cook it in the instant pot at high pressure for 8 minutes with 1 cup of water, salt & pepper. Any way you get your chicken cooked and shredded is fine
In a large pot, heat oil over medium heat. Add onion, jalapeño, and green chilis and cook until soft. Add garlic and cook until fragrant. Add broth, chicken, beans, corn, & seasoning.
Bring to a simmer & let cook for for at least an hour. * best if slow cooks for 45 hours. Turn off heat and add sour cream
Garnish with cilantro & cheese.
