Today we learn to cook a great thanksgiving or christmas vegetarian recipe for all occasions, the mushroom wellington. This is not just for vegetarians either, filled with portabello mushrooms, cheddar, garlic and camembert and wrapped in golden brown puff pastry, who wouldn't enjoy this?!
to make it vegan you can just leave out the cheese and make it with vegan puff pastry.

Recipe (for 4 wellingtons):

30g (1oz or 2 tbsp) butter
4 flat mushrooms
1/2 onion
1 garlic clove
1 large portabello mushroom
4 small thyme sprigs
100g (1 cup) cheddar cheese
50g (1 cup) bread crumbs
80g (1/2 cup) camembert cheese
1 tbsp chopped or dried parsley
1 large sheet of puff pastry
1 egg
salt and pepper
